-half an onion
1. Cook the bacon per instructions on package in one pan
2. Cube the onions. Whatever you do not use can always be frozen!
3. In another pan, pour a little bit of olive oil in the pan and then add onions. Cook onions for about 2-5 mins on medium heat
4. Cook sweet potato in microwave for about 2-5 minute to soften it. (I do this to make it easier to cut. If your a master chef or have amazing arm muscles, you can skip this step.) Peel the skin off and then cube it. I use my Chop Wizard, but you can always cut by hand.
5.Add the sweet potatoes, garlic, parsley, and salt to the onions and cook on medium until it starts to brown to your liking.
Once brown, add to bacon and enjoy!
I love sweet potatoes because they are tasty and help you feel full all morning! Plus, you get to eat bacon, and any meal is better with bacon :)
